The latest in maple technology

Tim Meeh got a grant to upgrade the equipment in his Canterbury sugar shack. A new reverse osmosis machine and a cleaner, more efficient evaporator that burns 25-30% of the wood of his old evaporator. You can buy North Family Farms syrup at Shaker Village (next door to the farm) and at the Concord Co-Op.

I am less of a fan of this shot, but it is the only one that shows off the shiny new evaporator. Nice reflection.

Swans Island '10

More food loving this time. Still explored, but spent much more time by the stove making lobster benedict, pumpkin fondue, Amalfi-style seafood stew, butternut squash and fig risotto, baked grits-Highlands-style and more.
